Catacome die Cappuccini: There are some 8,000 mummies down in the catacombs underneath the Capuchin convent. Some are remarkably well-preserved and worth a visit. Take your kids in at your own discretion.
Gesu Church: As far as architecture goes, this is one of the most important buildings in Palermo, built in the 1500s. The most prominent feature are the polychrome marbles on the floors and walls, a feature that sparked the Sicilian Baroque style.
Monreale: Head west of Palermo a dozen kilometres and head to the top of the hill for the most amazing view of Palermo and the sea. While you're here, stop by the duomo and visit the cloisters.
